It may seem self-evident that warm-season crops thrive in warmer temperatures, while cool-season crops prefer lower temperatures. However, the reason for this difference is not always clear. Why do some crops like the heat and some the cold?
It turns out the major difference between warm- and cool-season crops has to do with water content. Cool-weather crops tend to have larger leaves with lots of water. Because water is shed more easily in hot weather to evaporation, cool-season plants do best in a temperature range of 35 to 75 degrees Fahrenheit. In fact, if these plants are exposed to temperatures much higher than this, they may prematurely put out seeds, a process known as “bolting.” Bolting gives these plants a bitter flavor and inhibits their growth.
On the other hand, warm-season plants, which are often larger and tend to grow on vines or bushes, prefer temperatures of 65 to 90 degrees Fahrenheit. In most cases, these plants need a minimum of six hours of sunlight per day to enjoy good health. For this reason, they tend to thrive in warmer temperatures.
